I whipped this up the other night to go with grilled beef. Yum yum yum. Green peppercorns have a hint of turpentine flavor. I’m not sure why I enjoy this so much, but I do. . Be sure to have some crusty bread on hand for dipping in the extra sauce.
Green Peppercorn Sauce
makes about 1.5 cups
1 Tbsp butter
2 Tbsp scallions, minced
1 scant cup beef or vegetable bullion
1 cup heavy cream
3 Tbsp brandy
2-3 Tbsp green peppercorns, drained
Saute the scallions in butter, add the remaining ingredients and simmer until thickened to sauce-y goodness, about ten minutes.
